2007 VELLUM Cabernet Sauvignon
Made in a French style, the 2007 VELLUM Cabernet Sauvignon is beautiful and elegant with superb balance and perfectly ripened fruit. The wine opens with aromas of boysenberry and spice with hints of sandalwood, nutmeg and cardamom. On the palate Vellum falls broadly with velvety tannins that float mid-palate before enveloping the tongue. The oak is restrained, allowing strong expression of blackberry and black raspberry with background notes of graphite and espresso. More spice comes through on a very long finish. (Only 800 cases produced.)
VELLUM is a blend of three grape varieties: 84% Cabernet Sauvignon, 10% Merlot, and 6% Petit Verdot.
